Use lvl 5 cut gloves at work everyday. Great for straight cuts, but not punctures.

I'm a butcher, with the mesh glove most times you wouldn't hurt yourself because its usually protocol to have really sharp knives so you shouldn't need to apply much pressure with the blade and you would usually have a couple of efficient and safe slicing tips so you wouldn't chop your finger off

As a chef with some seriously sharp knives, I once attempted to demonstrate to a trainee how good those level 5 gloves are at stopping you accidentally cutting yourself. Cut straight through em 😂 don't think the company bought decent gloves

Chain mail is built to protect you from slashes, it was used around the neck, waist and chest to protect vital organs with cotton padding to prevent stabs. It would still hurt.

Remember, cut resistant gloves are for environments with cutting and don’t fully protect, they aren’t a substitute for safe usage of machines but can help when something goes wrong. Also, don’t cheap out on PPE, it can save lives when things go wrong

Dont forget safety rule #1 dont use dull knifes. Much higher chance of knife slipping if you gotta press down really hard, youll be pressing the knife just as hard into your finger as you are cutting
