Alabama native here, you absolutely nailed this recipe. Very similar to my own personal recipe, it really is a great unique style of BBQ sauce. I recommend mixing it with any regular style of red BBQ sauce on a pulled pork sandwich.

Canadian here. I've never seen white BBQ sauce either. I'm willing to try whatever Chef John thinks is yummy enough to put out there for us. Out of curiosity I asked a grill master friend who happens to be originally from Bama. He said yup it's a thing! He also said that one of the best chicken breasts he ever ate was done with a white sauce like this in foil at a church BBQ. With Chef John and my buddy the grill master chiming in, you know I have to try it! Continued thanks for bringing us interesting things, Chef!

Quick tip, put the ingredients in a mason jar, secure a lid and shake, you now have a great sauce and storage for extra. I do this with my own white sauce recipe.

Being born in the city of Novosibirsk I must confess: my overindulging in the local variety of Pelmeni does give me some Siberian shakes!

Chef John. You did it again. Just made the white sauce. DELICIOUS. I left out the salt and used spicy mustard. Real men don’t eat yellow mustard. Going to make chicken thighs tomorrow. You are the best.

I have to admit Chef John, I was really troubled about even the concept of a white barbecue sauce, but was intrigued. I made some over the weekend, and It actually tastes phenomenal. mind=blown

I've lived in Alabama for about 12 years and only heard about this within the last year. Full Moon bbq has it and it's freaking awesome. This sauce is great should definitely be more widely known.

Yes yes yes! Alabama white BBQ sauce is so delicious! Try it on different meats and some restaurants serve grilled chicken with this sauce in a hot yeast roll.... oh yeah....

Chef John,

I completely agree that "white" BBQ sauce is one of the better food items that comes out of Alabama. I will give this a try; however just used your seared halibut recipe, which was perfect. I paired it with some domino potatoes, which is an item I would like to see you do a video on! You know the square shaped thinly cut potatoes baked with clarified butter and sea salt, great meal! Thanks for all of the wonderful videos, I have been making your recipes for over a year now and you're the best!

Great recipe, Chef John. I've always wondered about what makes a great white sauce. In the regions where this is popular, the pit masters are quite secretive about their recipes. By the way, the traditional finish is to "baptize" the meat. That is to entirely submerge it in a vat of white sauce. They do whole chickens this way and it's out of this world. Thanks again, Chef John! You've done it again. ^^

When my son graduated from Basic Training at Fort Benning, we drove across the Chattahoochie River to Fenix Alabama to a BBQ Joint called the Hog Rock Cafe. On each table they had three sauce bottles; Texas red, Alabama white and the North Carolina style, which is vinegar and yellow mustard . All three were good, but I particularly liked this one and the NC style. Personal prejudice: if you want Texas red you should probably get in Texas.

I live in northern Alabama just minutes from the resturant that originated white BBQ sauce. It's delicious and now I can't wait to try it at home.
