ACKEE MEDLEY AND ZOODLES
ZOODLES: 1 MEDIUM SPIRALIZED RAW ZUCCHINI (using spiralizer)
ACKEE MEDLEY: Scald ACKEE and set aside. Saute hand sized BROCCOLI (cut in medium piece), 1/4 MED PURPLE CABBAGE, 2 MED CARROTS cut in slant circles, 1MED ONION sliced, 1 MED TURNIP cut in cubes, 2 GLOVES of GARLIC minced, finely chopped PARSLEY and a SPRING OF THYME. Add desired amount of SCOTCH BONNET PEPPER ,SALT for taste and NATURAL POWDERED SEASONING.
Heat pot along with small amount of coconut oil, add all ingredients for Ackee Medley and saute, add Ackee, Salt, Powder Seasoning. Add small amount of left over water from scald ackee, simmer under low heat, add zoodle to your favorite dish, then add Ackee Medley.
SIDE: RAW LETTUCE chopped, garnished with Poppyseed. Bless it, Give thanks and ENJOY!
