5 INGREDIENT Beef & Barley Stew

1 tablespoon oil - add to medium pot set over med heat
1 large cooking onion, diced - add to pot and cook 2-3 minutes
1lb (454g) stewing beef cut into small 1/2” pieces - (if the pieces are bigger they won’t be tender)
add to onions and cook 5-6min
1/2 cup Pearl barley - stir it into beef
3-4 fresh thyme sprigs - add to beef
Season with salt and lots of pepper. Add enough water to cover the beef and barley by about 3 inches.
Cover and simmer on low for 45min to 1 hr until the beef is tender.
1 cup frozen peas and carrots.
Stir into the stew and continue cooking until everything is warmed through.
