You don't need to create a second HD and dd all the contents of the first one. Open the Virtual Media Manager, resize the existing HD to the size you wish, then boot with a live CD and use GParted to resize the partition of the HD. It is much faster because you don't have to copy the partition from one HD to the other. It is a bit more tricky if you have defined a swap partition at the end of the Virtual HD but you can get around on it quite easily.

Another thing you could do is to create a virtual disk where you drop all your big files onto, partition it with btrfs and when you run out of space, just create an additional disk with the space that you want to add and combine them together to one filesystem on the guest machine. Just issue the command "sudo btrfs device add PATH_TO_NEW_DISK PATH_TO_MOUNTPOINT" and you are good to go!
You should be able to do the same thing with lvm and some other fs on top of lvm, but why would you?

There are different ways for transferring filesystems from one drive to another. Historically I used clonezilla and rsync.
