This high protein, low carb pineapple shrimp ceviche is actually SO easy to prep! There’s no cooking involved & you just let the shrimp marinate & cook in the lime juice!

Here’s what Gracie Norton & I put in ours:

•1 pineapple, cut in half
•1/2 red onion, chopped
•1 mango, chopped
•1 tomato, chopped
•1 avocado, chopped
•1 cup shrimp, chopped
•1/2 jalapeño, seeds removed & chopped
•1/4 cup cilantro, chopped
•2 lime, juiced

1️⃣ Cut a pineapple in half and scoop out the center.
2️⃣ Add all ingredients into a bowl & mix to combine, let it sit for 10 mins (or longer)
