Tortang talong is a staple dish found in almost every Filipino household. This is a simple omelette dish that’s tender on the inside from the charred eggplant and incredibly budget-friendly!

Him saying its budget friendly is underappreciated. Tortang Talong is one of the staples of any regular college students. Cheap, filling, and surprisingly healthy.

I like mine with minced tomatoes, onions, and chili peppers on one side. But the plain one always pulls me back on those college days where I can only have P50 (1 dollar) at most for my breakfast.

I tried it. It is spectacular! What's utterly ingenious is that you can have it plain like here, or dress it up according to your tastes (e.g., shredded potatoes, or chopped onions and hot chili peppers, or chopped tomatoes et al.) I've tried it several ways but I always come back to the original. There's something about the simplicity and the synergistic affects of just the eggs & eggplant with salt & pepper. Yummy-lish! ❤

Yes, this is the underrated vegetarian dish. It was featured as part of our buffet menu yesterday. We served garlic rice, pancit, steamed bokchoy, chicken adobo, tortang talong and grilled spare ribs. Everyone loved it!
