Ingredients:
15 g flaxseed
300 g flour mix
10 g psyllium flakes or powder
5 g salt (or 1 1/4 teaspoons)
230 g lukewarm water
15 g olive oil
Rice flour to sprinkle
Preparation:
1- Place the flaxseeds in a food processor and grind for a few seconds.
2- Add the flour mix, psyllium, salt, and blend for a few seconds.
3- Add the lukewarm water and blend.
4- Add the olive oil and mix until it becomes a homogeneous dough. Remove to a surface dusted with rice flour. Make a roll, divide into 9 portions (with 60 g approx.), cover with cling film and let it rest for 15 minutes.
5- After this time, with the help of a rolling pin, roll out each portion into a circle (make it 15 cm in diameter approx.). Make all the disks, cover with cling film and start baking the loaves.
6- Preheat a non-stick frying pan over medium heat. Place the dough disc and turn every 20 sec until it starts to inflate. Then let it cook for another 4 minutes on each side. Remove to a plate and cover with a cloth to keep warm. Serve with your favorite filling.
