These are good categories. In bourbon, I have all but one. I don't currently have a finished bourbon, but I have a decent selection of finished rye and malt whiskies, and even a sherry-finished rum. I would add one more category - an inexpensive mass market bourbon that is well suited for use as a mixer. I have two right now - Wild Turkey 101 and Jack Daniel's Old No. 7. (Jack Daniel's isn't labeled as bourbon, but it meets the legal requirements, so it counts for this purpose.) Even people who usually drink their whisky neat might occasionally want a mixed drink or might have guests who prefer mixed drinks or rocks pours. This could overlap with the bonded category since many of the less expensive bonded bourbons are suitable as mixers.

Another possibility would be a bourbon from outside of the core area of production (Kentucky/Tennessee/Indiana). Varying climate conditions in other parts of the country can result in unusual flavor profiles. Also, sometimes native or heirloom varieties of corn are used. I find Texas to be interesting. Bourbons there can be quite different from the standard Kentucky style.
