I like to think of myself as a somewhat accomplished photographer but I did still learn something new today. I use Auto WB for casual photography and an ExpoDisc for incident light metering and white balance when I want things to be really precisely balanced. But it never occurred to me that when you do this, it removes color that is actually in the scene that you are observing. You'll get a more accurately "white balanced" photo - just not what the scene looked like. The comments about using fixed white balance settings (Daylight, Cloudy etc) corresponding to the actual light source temperature was something of an epiphany for me there. So thanks for that.
