2 Cups of Cornmeal
½ Cup Self-Rising Flour
¼ Cup Mayonnaise
1 Cup of Buttermilk
2 Eggs (beaten)
¼ Stick of melted butter

Sometimes, when I'm mixing something in my mom's old red pyrex bowl, I think of her skillet cornbread, and this looks just like it! I know it's yummy just by watching Sheila turn over the ingredients with love💛

Looks great with the beans n greens. Good with homemade chili too. Using the cast iron pan makes a big difference on the bottom toastiness.

This my 1st comment since Steve passed. Actually I never commented to Steve either. I love to cook and I love all of your all's recipes. What got me started, with this comment, was the great condition of your cast iron skillet.
My Mom could cook with any Kansas farm cooks and she always made corn bread by the 13'X9" pan (sometimes 2 at a time). She was always ready to feed a dozen people, and sometimes she would have stretch it.
When I grew up and learned about making cornbread in a cast iron skillet, I never looked back. God bless the whole Shotgun Red family.

This is very similar to what Mother taught me, apart from the mayonnaise, which is a brilliant addition. We loved to put butter and sorghum molasses on ours...the memories ❤. Thank you for sharing this today 🙏.

You didn't preheat the skillet. Is that part of the secret? I grow my own dent corn, grind it for grits and cornbread, but I must admit the corn bread is hit and miss. Im trying it your way. I grow those greens and pink eye purple hull too. To the memory of Mr Red and you ladies. Thank you.
