SWEET POTATO GRILLED CHEEZE SANDWICH 🍠💖 Who's ready to drool over this comfort food classic? 😍
⬇️ RECIPE ⬇️
Imagine buttery, golden slices of sweet potato, gooey vegan cheese & perfectly caramelised walnut mince 😍 It’s the ultimate way to satisfy those cravings! 😋
🥪 INGREDIENTS:
1 tsp olive oil
120g walnuts, roughly chopped
1 tbsp tamari soy sauce
1 tbsp maple syrup
½ tsp smoked paprika powder
2 cloves garlic, minced
A handful of fresh spinach
1 tsp vegan butter
2 large sweet potatoes, peeled & cut into ¼-inch slices
Salt and pepper to taste
4-5 vegan cheese slices
Fresh chives to serve
👩🍳 HOW TO:
Step 1 - Heat olive oil in a pan over medium-low and fry walnuts for 5 mins, stirring regularly. Add tamari, maple syrup, and paprika, cooking for another 2 mins. Remove from heat.
Step 2 - Sauté spinach and garlic until wilted, then set aside.
Step 3 - Melt vegan butter in a griddle pan, adding potato slices in a single layer. Season with salt and pepper. Cook until tender and golden on both sides (about 10 mins).
Step 4 - Reduce heat and place vegan cheese on half the slices. Top with walnut mince and spinach. Add a splash of water to the pan and cover to help the cheese melt.
Step 5 - Top with another sweet potato slice and serve with fresh chives.
Enjoy these beauties on their own, dipped in ketchup, or alongside a hearty bowl of tomato soup! 🍅❤️
