There is a thing that I don't understand in non-euclidean geometry particularly in lobachevsky postulates. How can a line intersect another line in euclidean space and still be parallel in non euclidean space

Planes fly straight from their Point of View, but mapped on a flat surface like a map it seems curved.

I guess you have a mistake there. The map you are using for the example of the airplane has a Mercator projection, and as such every srtright line you draw on it is a great circle.
