The "seperator" us used to hold the 2 sides of the rip cage apart to ease cutting and removal of the Esophagus and heart, lungs, and cutting the diaphragm, etc. Good review and much appreciated explanations. Most of the field dressing videos I see, do not show "caping" which is what the "Caper Knife" is for. This removes the hide/skin of the deer, and it is shown in the videos promoting the BIG SKINNER knive etc. So at least I have learned what the Caper Knife is intended for. Lots of hunters will use just about any knife to caper and do other cuts. Some have even advocated a big box store Utility Knife; but you know, I do like the idea of having a nice set like this with the Wyoming Gut Knife included and the Bone Saw for cutting the Breast Bone etc. I am glad I bought this and your review confirms it as a good choice for newbies like me. I also bought The "round shaped" ceramic file for sharpening the Gut Hook groove and got a full size 2 sided d flat portable "diamond" stone for the other knives. I spare no expense for the sharpening gear, as some videos show the extra work needed with the knifes get dull. You all be good out there and good luck to everyone.

Last night I used this kit to quarter and skin an elk. Just so you know. It works for everything.

Dexter is a good affordable brand. I've used them for the last 3 years professionally.
