Yogurt Cake 🍦

I loved this yogurt cake. It's pretty easy to make and it pairs so well with a berry sauce or some jam.

Ingredients:
300 g yogurt (1 cup + 1/3 cup)
150 g sugar (3/4 cup)
40 g butter (3 tbsp)
3 eggs
150 g cornstarch (1 cup)
1 tsp Vanilla
Lemon zest
Icing sugar

Instructions:
1. Preheat your oven to 180°C (350°F) and grease and line an 7 inch (18 cm) pan.
2. Separate the eggs, placing the yolks in one bowl and the whites in another.
3. Whisk the yolks, sugar, and vanilla together until creamy.
4. Melt the butter and let it cool slightly, then add it to the yolk mixture along with the yogurt and lemon zest. Mix well.
5. Gradually add the cornstarch to the yolk mixture, stirring until smooth and well combined.
6. Whisk the egg whites until they form stiff peaks.
7. Gently fold the whipped egg whites into the batter, being careful not to deflate them.
8. Pour the batter into the prepared pan and bake for about 55 minutes or until the cake is golden and a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
10. Slice and enjoy your flourless yogurt cake!
