The dessert on the train is a Clootie Dumpling. It's a Scottish steamed pudding. It's steamed in a cloth (a cloot). Hence the name clootie dumpling. Traditionally the cloot is covered in flour, so you end up with a skin on the pudding. My grannie made the most amazing Clootie Dumpling.
