My favorite summer dinner is chicken caesar salad sandwich. You take a sour dough/ French loaf and slice it down long way. Hollow out most of the bread. Rub the loaf with olive oil and sprinkle on garlic powder. Toast it lightly under the broiler. Lay out romaine leaves on both sides of the loaf in the hollow. Then make your chicken salad from rotisserie chicken stripped off the bones. ( I like to get the already done chicken at Costco right by the rotisserie whole chickens). Hope that makes sense. Then all you have to do is add parmesan cheese and your favorite caesar dressing. Mix. Then scoop it onto the leaves the bottom side if the loaf. Top it with the other side of the loaf. I serve it with some fresh fruit and a glass of my favorite white wine. So yummy.
