Casey's Foods Famous Chicken Salad

Casey's Foods, located in Naperville, IL is famous for their chicken salad. My buddy Keith, now living in North Carolina, turned me on to this delicious treat. Unable to ship my friend his favorite comfort food, I put this video together.

This is a simple recipe that gets great results. I chose to roast my chicken (bone and skin) rather than poach. The salt & pepper was used on the chicken in the over. Use just enough mayo to coat the chicken.

4 cups cooked and cubed chicken breast (dime sized) seasoned with 1 tsp salt & 1/2 tsp pepper

1 cup finely dices celery (about 2 stalks)

Hellmann's Mayonnaise (3/4 to one cup), just enough to coat chicken.
