Hey everyone, there's a longer version on my channel that covers how to eat it and what sauces go well with it.

My favorite way is to eat it with gunpowder chili (milagai podi) and oil. Another great way to enjoy it is to add spiced potatoes (aloo masala) and with a side of sambar (sour vegetable soup). Also it should be eaten with one's hands

Nothing wrong with cooking both sides. No “supposed to”s. I always cook mine both sides I like it thin, crunchy and red. Some like it soft and thick. Some batters won’t allow you to make thin ones. Some pans impact expectations. It’s food and a basic one at that, like bread or white rice. Either way if you have the right chutney/ side dish to eat with, it’s all good! You can try to put things on it too like potato curry or a spice mixture (podi), or ghee or egg! Have fun! It’s a staple where I come from and it can never be done wrong!

i am a south indian but i could never eat dosai by itself because of the bland sour taste. I'd eat it with gunpowder+sesame oil or a homemade coconut chutney or kaara chutney or some other chutney or a sambar

Basically, the dosai is supposed to be a sponge for flavours. same goes for its steamed cousin, idli.

Ok, one tip as an Indian from southern part of India . Try the dosa with :

1. chicken / mutton / fish / egg curry ( Any variety will do of Indian subcontinent or Chinese or African )

2. Veg stew/ sambar

3. Coconut / tomato/ ginger / garlic Chutney

4. Curd and sugar

5. Ghee and sugar

6. Coconut scrapes and sugar

Tip: do not put water directly in container. Sometimes you can put too much and there is no way nack. Take some batter out in big bowl, add water and check if you can make dosa with it. Adjust consistency if required.

Cooking on one side makes dosa crispy.
Cooking on both sides makes dosa soft.
It's on one's preference how they like their dosa and make accordingly.
Dosa and idli are eastern with chutney (sauces) or gravy like chicken curry, sambhar etc

You can fry both sides. Not a problem at all. It's just different from home to home.

Everything you did is perfect if you add a half or a teaspoon salt to a batter it taste much better also u can sprinkle some milagai podi while dosa was on pan it tastes yummm

Putting the lid on helps steam the other side so we dont have to flip. I feel like the flipping softens the crispy side. Lid off once you see no more wet batter and let the steam evaporate and get the desired browning, then lift out and serve or place on a cooling rack to keep the crisp.
One tip, if the batter is bunching up while spreading on the hot pan, that means the pan is too hot. Cool it down by sprinkling little water on it and wipe down.

doing both sides is really ok and thinner dosai is crispier but requires little bit of practice, beaten egg also can be applied on the top to make it egg dosai which I really like

I usually cook it on both sides but the first side gets cooked the most and when you place it on the pan if you swirl it with a spoon after you get a thinner layer.
