You didn't read enough on Bruce Lee's instructions on fighting. At segment 50 seconds, the JKD guy freezes. Bruce said, and I quote, "above all do not freeze in a position."

He did that in his movies for theatrics, but in real life, don't do that. At the very least, keep minimal activity in your upper body.

Think of it like being in a car: it's faster to pull off if your foot is on the break, it's in drive, and the engine is still running than have to but in drive first, even if the engine is running.
