Turn down AI difficulty damage scaling to 0 if you're playing on Legend to avoid those ridiculous kickouts. Also, try to get your opponent max health (black bar) to at least half before hitting a finisher to end the match.

7:16 funny thing is when I first started playing on legend difficulty and went for the beat Roman on legendary diff trophy, for some reason I won after 1 finisher as Finn Bálor

I noticed changing the difficulty from legend to Hard stop all the ridiculous kickouts. You'll just have to tweak the Sliders to get the difficulty up then.
