Funny how the two second strongest members of the crew (Sanji and Zoro both hold 2nd place) have to be the most volatile as wel with Zoro being Zoro obviously tending to sleep through battles and whatnot and Sanji who’d at many points in the series be fully willing to sacrifice the entire crew for women except of course Nami and Robin yet at the same time Zoros loyalty and willingness to go through pain and hardship for Luffy is insane and Sanji contemplates giving up everything about who he is and his aspirations and morals to become a cold killing machine for his captain.

Strength - at least tie, but more likely jimbei. Sanji's strength isn't bad, but his queen kicking feat is heavily overrated. Queen was throwed out of island when he was unconscious already. Knocking up brachiosaurus isnt good feat on itself, luffy and kaido can lift island sized object, what are that ~50 tons, compairing to one piece top tiers feats. Isnt point of knocking up feats in owherwelming your oponent's attempts to stand still? Jimbei, in his turn, can, as example, block akainu punches.

Endurance:
Regeneration != endurance
Endurance is how injuried can your body be, while you are still standing and regeneration just returns you to point, where you have no injuries. Regeneration doesnt save from oneshot and high endurance does. Last sanji's endurance feat was in skypiea and i see no reasons to expect, that it has improved since then.

Armament:
Jimbei's defence is based on armament haki only. Jimbei is low y1c level. Jimbei has good defence, relatively to his overall power. Make conclusions.
Sanji, in his turn, is armament active user too, but he has no good feats, which are comparable to his level.

Offence and defence:
Comparing sanji's offence to jimbei offence and sanji's defence to jimbei defence is pointless. It would make much more sense to compare jimbei's offence to sanji's defence and vice versa. And if we do we can see, that jimbei wins. Sanji's defence is
If jimbei lands on sanji punch, he wins, because:
1) Fishman karate damages not by crushing/slicing damage, but by manipulating water inside of opponent and creating shock waves, so exoskeleton is useless
2) If all sanji's organs will be damaged, he obviously wont be able to dodge attacks on his normal speed, do you remember his endurance? So it wont be problem to land one more punch and nulify all that sanji has regenerated. And another one. And do so until sanji die.
3) Jimbei's battle iq and experience allows him to came to that conclusions, to which i came.
Jimbei's defence is block + armament and it is solid, he can take rage big mom attack with fire infused sword, akainu punch and several whoswho attacks. Sanji's stamina is perfectly enough to make ifrit jambe combo(well, a little more, but his stamina expenditure in fight before it was much lower) moving on top speed during it. Jimbei definitely can survive combo(even queen could, because he has taken major damage before it) and sanji needs to move on high speed to not get one shoted.
Besides that jimbei can create aoe water attacks, vortexes and throw drops, which makes dodging even harder.

Even if sanji wins like 5 or 6 fights of 10, it is extremly difficult fights for him
