You should add industrial craft and you can have power lines and stuff like that, it also adds some really nice blocks

In the beginning bit, Kysen the Brit bargains with Barnaby Battersby the builder to build a Builder's Hut briskly.

Pro tip for new builders, turn off your camp fires. The civilians will walk into them and get mad at you for having an unsafe area. Also, use f7 if you have the light hud mod. The builds don't give off enough light to prevent mob spawns. Also, the civilians can fall off ladders. I had one constantly falling when building a guard tower.

The extra layers of podzol should be fixed in the most recent minecolonies alpha. I you don't want to switch from beta to alpha, you should be able to download the most recent version of the Medieval styles from the developer on planetminecraft and put them in your Structurize folder. Prior to the most recent alpha of minecolonies, I believe they were using the 1.14 schematics for the medieval buildings.
There's also a mod you might consider adding to help with some of the more difficult blocks. "Better With Minecolonies" adds recipes for grass, podzol, ways to grow specific flowers, crafting dyes from coral, a few other things (nothing too OP, just building blocks). Requiring podzol for level 1 buildings is a bit crazy, IMO.
