As a Filipino I strongly recommend taking the lid off once tender and raising the temperature to allow the sauce to reduce, thicken and get Sticky Icky Delicious 😋

Thanks for highlighting Filipino cuisine Sam. I sometimes cut the simmering time of the adobo in half, place chicken in the fridge overnight to dry out the skin, toast until crispy and fully cooked then thicken the marinade into a glaze.

Glad to finally have a recipe to follow. I’ve watched my Filipino mother in law make adobo many times and she is just dumping stuff in the pot, no recipe and it’s always amazing. Start off with some lumpia, then on to chicken adobo and pancit. Always delicious.

We do this but I throw them in the air fryer for a few minutes to crisp it up. So good. Do you have any videos making sisig? It’s the best Filipino dish ever, if you haven’t shown everyone it would make a great video.

Just made this delicious. I covered for 15mins then removed the lid and reduced the marinade a bit, which turned out AMAZING!!
