This Stew didn’t start out as a Stew but ended up delicious & perfect for a rainy day!
I have a Ninja Foodi that I used in teh pst to make Beef & Guinness Pie, You really need the pressure cooker function for it to come together so I adjusted the recipe added water and put it to slow cook for 6hrs & went to bed! If you pinched for time put it on rapid cook & bake for 1.30 hours checking periodically to make sure it doesn’t burn on the bottom.
RECIPE:
2lb Organic Cubed Beef
1 can of Guinness
2 cups Beef broth
1 cup water
1 Tbl spoon Minced Garlic
1/2 Tbl spoon Mr Dash garlic n herb
2 Tbl soon Butter
2 Tbl Spoon oil for frying
1/2 Tsp all purpose seasoning
1 cup flour
2 Tsp salt
2 Tsp pepper
2 small Onions
2 medium carrots or 10(ish) baby carrots
3 medium Idaho potatoes
8 small/med Mushrooms
1 Bay Leaf
METHOD:
Add flour & all purpose seasoning into a bowl with your Beef & toss. Set aside & prepare your veggies,
Cut potatoes into 1 inch cubes, Quarter mushrooms & dice carrots into bite sized pieces. Dice 1 onion finely & the other into large pieces.
Set ur Speedi to Sauté function 5, Add 2 tbs of oil retoss beef and as into the pot in small batches (I did 3)
Remove when browned n set aside, Add 1 tbs of butter & add your Mushrooms after 1 min add minced garlic & cook for 4/5 mins. Add 1 tsp of Salt & Pepper
Remove Mushrooms and set aside, Add 1 Tbl spoon Butter, Mr Dash, Onion & sauté until translucent
Add back in your Mushrooms, Garlic, Carrots & Potatoes and give a stir
Add in your Guinness, Beef Stock, Water, Bay leaf, Salt & pepper
Finally re-add your Beef & give it all a good stir. Set it Slow cooker & low for 6hrs & Come back to delicious stew. To speed up the process set to steam bake for 30 mins then switch to slow cooker mode
If your pinched for time set it to steam bake for 1.5 hrs but check regularly.
