One Pot Mexican Rice Recipe

Ingredients

4 ripe medium sized tomatoes
2 large garlic cloves
1/2 onion
1.5 cups water
1 cup long grained basmati rice
4 tbsp oil
2 tbsp finely chopped garlic
1 cup finely chopped onion
Salt as preferred
4 tbsp Chipotle sauce
1 cup boiled kidney beans
1 cup corn
Fresh coriander for garnish
Slit green chilly

Instructions

Wash the thoroughly under running water until water runs clear. Soak rice in water for 30 minutes. Drain and spread it out on a sieve to air dry. Make a puree with tomatoes, garlic, onion and water and set it aside. Heat vegetable oil or sunflower oil in a pan. Add the garlic and saute for a few seconds until aromatic. Add the onions and saute for until they just start to caramelise. Add the air dried rice and toast it on low heat for 10 minutes or until they start to brown. Do not over toast. Add the tomato paste along with salt, corn, boiled beans and chipotle sauce. Mix well. Finish it off with slit green chillies (or jalapeño if you have available) and some coriander sprigs. Cover and cook on lowest heat for 30 minutes. Let it starly covered. Now take the lid off and gently mix the rice with a fork. Garnish with more coriander and enjoy!
