Oh, how I love Mexican rice, it's a comfort meal for me. I used to always make it into more of a congee consistency since I always choke from eating too fast. Once I get out of the streets, I can be able to have my comfort food again. Thank you for always cheering me up in my most difficult time right now, even though you may never see this 🫶

The rice never popped because it was wet when you tried to fry it wet, this is not traditional

I don’t rinse my rice when I’m going to fry it or it will get mushy. I make mine the same way except I pressure cook for 5 minutes and let it sit for 10 minutes before releasing the rest of the pressure and it comes out perfect.
