Hello Hermann,

Now that the pumpkin season has begun. You absolutely have to try "kabak tatlisi". It's a traditional vegan Turkish dessert made from pumpkin, nuts and tahini.

As a kid i hated eggplants. With those kind of recipes, now i cant get enough of them. 😂

Its actually a translation issue. “Bayildi” has 2 meanings in turkish. First “fainted” as you said, second “loved” as you missed. When he tried it he loved it. It is the original and correct translation of it. You’re welcome 😅🎉

İmambayıldı usually being served cold. Same dish with meat and hot serving is called ‘Karnıyarık’ which means ‘Split Belly’ in English 😅

Yaprak sarma, zeytinyağlı lahana dolması, zeytinyağlı biber dolması, zeytinyağlı kuru patlıcan dolması, barbunya pilaki, antalya piyazı, kısır, kabak mücveri... There are alot of turkish vegan traditional foods. Turkish cuisine is realy underrated

Deconstructed baingan ka bharta. It's so cool how many cultures just figured out roasting brinjals/aubergines/eggplants makes 'em perfect

in the south of Italy we have a lot of recipes which come from centuries of shared history with the northern africa regions, greece and turkey. They are not exactly the same, but there are a lot of similarities and common ingredients such as olive oil, eggplants, zucchini, cauliflowers, etc...

Ever since I became vegetarian Imam bayıldı has become a staple in our household :)
My mom makes it instead of Karnıyarık (the meat version of this dish), along with rice and salad it's one of my fav dishes!

This filling is called "sataraš" (satarash) in Croatia and neighbor countries. It is often eaten like a side dish or even a whole meal. Yummy 😊

imam byaldi is also the namesake of confit byaldi, the dish that is often referred to as "ratatouille" based on its appearance in the film of the same name. it's the layered sliced vegetable dish seen at the end

EDIT: please stop correcting my spelling, im using the persian transliteration rather than the turkish spelling bc im more familiar with the persian version of the dish

stuffed bellpeppers and sarma are also really good vegan options! zeytinyağlılar are the best

The way you said “zeytinyağlı” was very cute 😄 I recommend trying biber dolması (stuffed paprika) as well

Wow. I’ve been to Istanbul and all around Turkey and didn’t know this, though I ate a lot of vegetables and eggplant in liters of olive oil and all was delicious. Yum!

I've recently learned to make this recipe!! Ik my version isn't really authentic since i don't use garlic, but i drizzle the eggplants with a tahini parsley sauce and it's SO GOOD. Like, "my bf who dislikes both eggplants and peppers liked it" good

This dish seems to also be common in some regions in Albania, I just had it a few days ago in Gjirokastër. Delicious.
