I feel like brook is more like semi-immortal. I think he is more immune to almost all mortal ways to die due to him being a skeleton. He is immune to poison, can't drown when stuck in the water (I think this was shown a few times if i remember corectly), can simply put himself together when losing his head and other bones., and can repair broken bones with milk. i think being a skeleton gives him a enhanced form of longevity as he can't realy age physicaly. But i don't think he is truely immortal, as he did say that he dies if his spine gets smashed.
