There is nothing quite as delicious as a fresh piece of fish. Swordfish is especially delicious when it’s prepared simply and not fussed with too much. In Sicily, they have a sauce called Salmoriglio which is a very basic simple but elegant mixture of olive oil, lemon juice, garlic and herbs. Sometimes they just as parsley and a little salt and pepper and omit other herbs. Often times they use what is available fresh including celery tops and other greens that may be laying around. I followed your advice tonight with great success: the Swordfish (readily available here in Australia) melted in our mouths. Better still, my daughter craved for more of the sauce..!
