When I read "sweet child of mine" I was like he's not serious but it wasn't the main solo so yeah it's easy to play. Although" Knocking on heaven's door" first solo sounds really great and it's very easy to play for beginners.

Super easy: "Heart Full of Soul" by the Yardbirds (Jeff Beck) - which is probably like the only simple solo Jeff ever played :)
