INGREDIENTS
• ½ cup Walnuts
• 2 Cloves Garlic
• ½ tsp Salt
• ½ tsp Ground Pepper
• ½ cup Fresh Basil (Roughly chopped)
• 2 tbsps Lime Juice
• ½ cup Avocado Oil or Olive Oil
INSTRUCTIONS
• Combine all the ingredients in a food processor except for the oil.
• Start by pulsing and slowly drizzle the oil.
• Blend until the pesto sauce is creamy and smooth.

BEEF FILLING RECIPE
INGREDIENTS
• 1 cup Yellow/Spanish Onion (Chopped)
• 500 grams Ground Beef
• 3 tbsp Tomato Paste
• 6 Clove Garlic (Chopped)
• 2 tbsp Yellow Mustard
• 2 tbsp Worcestershire Sauce
• 1 tbsp Italian Seasoning
• ½ tsp Salt
• ½ tsp Ground Pepper
INSTRUCTIONS
• Saute the onion in a large pot over medium-high heat for 5 minutes.
• Add the minced beef and cook halfway.
• Add the seasonings: tomato paste, garlic, mustard, Worcestershire sauce, Italian seasoning, salt, and ground pepper.
• Brown until the meat is fully cooked.
PESTO AND BOLOGNESE LASAGNA ROLL-UP RECIPE
Yield: 12 Lasagna Roll-Ups
INGREDIENTS
• 1 Egg (beaten)
• 500 grams Ricotta Cheese
• 250 grams Frozen spinach (thawed and squeezed dry)
• 1 cup Mozzarella Cheese (shredded)
• 1 cup Pesto Sauce
• 12 Lasagna Noodles (cooked)
• ½ cup Fresh Basil Leaves (chopped)
INSTRUCTIONS
• Combine in a large mixing bowl eggs, ricotta, mozzarella cheese, spinach, and pesto sauce. Mix well. Set aside.
• Place the lasagna noodles flat on a clean, flat surface and spread a layer of the pesto cheese mixture.
• Spread a thin layer of ground beef filling.
• Gently roll the lasagna into pinwheels.
• Place the rolls in the baking pan and add a generous amount of bolognese sauce on top.
• Sprinkle some shredded mozzarella cheese on top.
• Bake for 30 minutes in a preheated oven at 375 degrees. F
• Garnish with chopped fresh basil on top.
