The best chicken soup doesn’t need much — just tender poached chicken, hearty winter vegetables, and fresh herbs simmered in chicken broth. It's a simple combination that’s a cozy hug for your taste buds and the best kind of immunity remedy.

I’ve been making this exact chicken soup for over a decade now. It's my go-to recipe when the cold weather strikes and I'm craving something light, brothy, nourishing, and warm. And while many chicken soup recipes often contain pasta noodles, they're definitely not needed. I swap those out for parsnips which are equally filling, but add a deliciously sweet flavor that works so well with the fresh herbs.

If you've made my chicken salad recipe you know that tarragon pairs beautifully with chicken, and I'd say it's the one ingredient that really gives this soup that "wow factor" as well. To make it even more nutrient dense one can take another step via making bone broth from the chicken bones/carcass using up all vegetable scraps and mushroom cut offs (for umami flavor) as well. If you add a swish of vinegar to make the home cooked chicken stock actually gel up. 1cup water per half cup bone broth will give a good stock.

Just made this and oh my my.... This girl is BRILLIANT! Love her recipes. Simple, easy and HEALTHY. She's right, Tarragon is a key. YUM! Will be making ALL WINTER.
