I haven't tried the realtime compositor yet but it is looking like a dream come true.

The "winding order" of vertices is a technical term in low-level 3D graphics programming.
The order in which you specify the vertices of the triangle, or actually the indices of the vertices, to the API (like OpenGL), tells it which way each triangle is facing. The winding order defines which is the front and the back of the face, for example, for the purposes of backface culling or for calculating normals.

But in Blender, I'm not too familiar with if it exposes the winding order at all. If it doesn't, I see no reason to use that terminology.

They should just call it "similar facing" or "similar face orientation" in that case.

As a native english speaker, "winding" is NOT a word for orientation, it's a much deeper technical term for how the vertices are stored. Talk to the devs for a better explanation of why they used that term, because it's a dev thing not an english thing :)
