Making traditional Spanish GAZPACHO in our tiny van

Gazpacho is one of the not many vegan-friendly traditional Spanish dishes, so we tried to make it! Recipe below:

(Serves 4)
1 Cucumber
1 Red pepper
1kg Tomatos
5 cloves garlic (to taste)
2 Onions
75g Crusty bread + some bread for the side
2-4 TBSP Sherry vinegar
Olive oil, salt & pepper

Chop up all of your vegetables, place in a large bowl, add the crusty bread, olive oil, sherry vinegar and salt & pepper.

Mix and mash together with your hands, let it soak for at least 30 minutes.

While it is soaking, prepare your bread for toasting.

Blend, check for salt, pepper and vinegar for your preferred taste.

Place in the fridge to chill, serve cold.

Enjoy!

First time I vacationed in Ben Al Medina in Southern Spain, we lived in a 4 star Hotel and first night at dinner I had this Gazpachio and complained to the head waiter "Mate your Soup is Cold!" and he immediately took it away, then brought it back and told me "Sir it is meant to be cold."
I changed my mind and had a mixed grill instead as I love my Meat.

I’ve been making this for years (it’s not my recipe though) and love it. Happy to share my recipe with you if you like? It uses tomato juice (and some fresh tomatoes), green pepper, not red, plus celery. But as you say, everyone has their favourite recipe. :)
