Mississippi Smoked Brisket Recipe | Southern BBQ Flavor Profile

We're all about interesting food fusion at ATBBQ, so Chef Tom decided to surprise us with his rendition of Mississippi Pot Roast. Since it's Chef Tom, you know it's going to include two things; building flavor with smoke and a brisket. Instead of all day in the slow cooker, Chef Tom smoked a Creekstone brisket flat on the YS640S with W Sauce and Cattleman's Grill Trail Dust, then braised it with pepperoncinis, beef stock, beef tallow, and ranch dressing. Born and raised in Mississippi for 40 years. We ate this all the time. Pot roast with a bag of rice can be at least 2 full meals for a family of 5 for under $20. But you missed the packet of Au Jus and stick of butter! Now that I'm older and make it myself I like to pour off some of the liquid, let it cool, skim off the fat, strain it, add a slurry, and make a gravy out of it. That goes on the rice.

I've seen this Mississippi Chuck Roast recipe before and tried it, dang, its good. The recipe they used was the same except they used 2/3 of a jar of the pepperoncini liquid with the pepperoncini. Just simple but darn good...good enough to bark loud and long for.

i love seeing the Mississippi style of meats getting more attention. ive done Mississippi Boston butt, brisket, chicken, pork belly. its really versatile and is a different way to prepare a protien that never fails.

I just did this for a popup a few weeks ago and it works! Nice because you don’t need to aggressively trim the brisket like usual

This is great! I do Mississippi pot roast for whitetail roasts. I only get whole packers from my local butcher, what can I do with the point if I wanted to separate them? How about some point only recipes?

all that spice and seasoning and smoke it would almost be impossible to actually taste any beef flavor.
