Formula for Chinese-style Vinaigrette:
3 parts of oil
3 parts of soy sauce
1 part of vinegar (black/white)
1 part of sugar

*when we say parts, it applies to any measurement.
For example, if you are using 1 tbsp of oil (=3 tsp), then your vinegar would be 1 tsp.
If you are using 30ml of oil, then your vinegar would be 10ml.
The key is to use the same measuring unit for all of the ingredients in the formula.

You can use different types of oil to make up your 3 parts of oil, for example:
-2 garlic oil + 1 sesame oil
-2 scallion oil + 1 peppercorn oil
-2 spiced oil + 1 chilli oil

By the way, I soaked my eggplant batons in water with vinegar for 5 minutes. Then I cook them in microwave at high power for 5-6minutes.

I learned this formula when @lucas.sin was making eggplant cold dishes on the @food52 YouTube channel. It was a game changer for me. I use the dressing formula for most dish that need chinese-style vinaigrette, like cold dishes, tofu, noodles or dumpling sauce.
