I was looking for an authentic traditional Genovese sauce with a video demonstration. Thank you for the video. To the people commenting that this is a copy of someone else's, please do some food history research. This recipe is documented for at least 500 years and is probably older. The addition of tomato product is a result of American produce being introduced to Italy and while can be considered tasty it is not part of the original recipe.

Seguramente el más suntuoso entre todos los platos de pasta, el más rotundo. Y por cierto que ese corte de carne de buey se ve extraordinario, tan entreverado, debe dar un mechado sublime., y está entre de los pocos platos en el que introducir alguna variación se percibe temerario con todo y que a mí, proclive al hastío y por ende favorable a la novedad alerta ando siempre en consentirme algún añadido, como así ha sido el caso con una pastaciutta boloñesa que acabo de despacharme y a la que a lo convencional he agregado algunos anacardos ligados a la salsa por testar un punto crujiente y ¡ Per Bacco ! que no lo lamento en estos instantes aún a despecho de que llegue a escandalizar a los más ortodoxos... Forte del tuo canale, la tua mano esperta si distingue !

I am not sure about the orange peel at the end, but for the rest this is the authentic receipe. No tomatos, no cinnamon or any other spices that were not known at the time this dish was created.

"pasta alla genovese" in correct italian. Otherwise "pasta genovese" means "pasta from Genova". 🤣
