Holding both a Michelin Star and Michelin Green Star Chef Jean Delport at Restaurant Interlude creates a Beef Tartare from the tasting menu. In a tribute to sustainability, Jean decided to feature a dish sourced from one of their favourite farmers just across the road. This farmer is deeply committed to ethical farming practices in every aspect of their operation. Jean complemented the dish with foraged alliums and nettles from the estate.
