I think the easiest way to prevent fake speedruns is not to show video proof, but to have a speedrun keylogger sort of setup that records the inputs. To verify, you'd play back the button inputs.

Obviously, there's a lot of unpredictability in Minecraft that can't be addressed in this manner, (random luck, AI decision-making, issues with playback or recording), which means it would have to be implemented into the game itself.
