Apple Hummus Collard Green Wrap

Well it's officially Fall! And you know what that means right? The gorgeous colors of fall leaves, cooler weather, and lots & lots of APPLES!! This will be the first video in a series where I will be using apples as a main ingredient. So stay tuned for more apple recipes to come! In today's video I'm going to prepare an Apple Hummus Collard Green Wrap. It's going to be great!

For the Hummus:

APPLE SPICED HUMMUS
2 15- oz can chickpeas, rinsed and drained
1 large apple, peeled, cored & chopped
1/4 cup lemon juice
1/4 cup natural almond butter
1 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cayenne pepper (optional)
pinch of salt

In a blender or food processor put all of the ingredients minus half of the chickpeas and blend until smooth. Add the remaining chickpeas and blend again until smooth.

For the Collard Greens:
Blanch the collard green leaves in boiling water for 5-10 seconds until they turn bright green and become pliable.

With a very sharp knife trim down the collard green stem until it is the same thickness as the leaf. Do not cut too deep or pierce the leaf or stem. Trim off the end of the stem that extends beyond the leaf until it is even with the end of the leaf.

To Assemble the Wraps:

Once the leaf is trimmed spread a thick layer of hummus onto the leaf. Leave about an inch all around the sides of the leaf. In the middle of the leaf place some shredded carrots, slices of sweet potato, some micro greens, and walnuts.

Fold the sides of the collard green leaf over the filling and then fold the opposite sides over and roll up like you would a burrito.

That's it! You can cut in half or eat whole!
