Soft Milk Bread w/Ube (Purple yam jam) from scratch

These are soft milk bread filled with ube (made from scratch). You’ll love this recipe and you'll love this ube jam filling!

***if you find that your dough is too wet, add up to 2 TB flour. Different brands of flour may result in a bit different consistency. I’m using gold medal All Purpose flour in this video.

Ingredients:
DOUGH
2/3 cup heavy whipping cream
1 cup plus 1 Tbsp whole milk
1 egg
1/2 cup sugar +1 Tbsp (add more if you like it sweeter)
1 Tbsp Instant yeast
4 cups all purpose flour or Bread Flour
1 teaspoon salt
UBE FILLING
1/3 cup water
½ cup granulated sugar
14 oz frozen or fresh grated purple yam (thaw if frozen)
1 can coconut milk (400 ml)
¼ cup sweeten condense milk
GLAZE
1 egg white
1 Tbsp water
Bake at 330 degree F for 16 minutes or longer depending on how you shape and size your dough.
Serving size: 24-30 bread rolls more less depending on how you shape your dough
I am using a stand mixer for this recipe. Highly recommend using a stand mixer, but you can always knead by hand. Time to knead will need to be double. Kneading the dough is an important step to get a soft and elastic texture to the bread. Hope this helps for those that are wondering.
