I used to work in a ramen restaurant and let me tell u, the amount of work that goes into that broth is insane. My boss would be in there literally all night simmering multiple huge pots of broth that we’d strain meticulously when it was done. They don’t fuck around when it comes to broth

For cold dipping udon the sauce is meant to be thin as it is a refreshing dish and lots if thick sauce clinging to the noodles would be too heavy. No hate tho luv ur stuff ❤️
