It makes me so happy seeing your videos, especially as it reminds me of my working mom and how she balanced work, cooking, household chores and taking care of our studies! In our Lithuanian home, my mother made dishes from many cultures. She was fond of making stiffed bell peppers. As a child, I loved eating raw bell peppers. But stuffed peppers...no. I'd eat the meat and rice stuffing, but not the cooked pepper. Then, in my 40s, I ate stuffed sliced bell pepper appetizers at a dinner party and liked them. Maybe, in my 40s, I just couldn't taste them as I could in my childhood. But there it is.

If you don't like the fajita vegetables sauteed you can make a shredded salad out of them and put that on the fajitas fresh. It's delicious that way as well!
