I live in the Midwest US. We grew up on tuna and noodle casserole as we called it. My mom would crush potato chips/crisps on top before baking it. We loved it!

Looks delicious as always. My meals of the week were -

Monday - Sausage, mash and beans.
Tuesday - Chicken cordon bleu, chips and peas.
Wednesday - Baked potato with beans and cheese.
Thursday - McDonalds double cheese burger meal.
Friday - Fish fingers, chips and beans.
Saturday - Steak, baked potato and peas.
Sunday - Roast pork, crackling, roast potatoes, peas, carrots and gravy. Apple crumble and custard for pudding.

Sometimes I make a smaller pork shoulder roast for the gravy. I poke holes in the pork and put garlic in them. Mashed sweet potatoes and some home grown collard greens. I like tuna casserole.

When I was small, my Mom would add drained canned tuna to Mac cheese. It was delicious!

On the poached chicken front... Once in a while I get some ribs from the butcher and before cooking them in the oven/air-fryer I simmer them gently in a spicy stock for 30-60 minutes so the final cook is just to give them that charred feel. But then I'll poach a few chicken breasts in the hot, spicy, pork-ribby stock for lunch/dinner/sandwiches the next few days. Works really well! 🙂

I love tuna casserole so tuna and pasta go together just fine.

Try this make a cup of dry stuffing to packet instructions skin 4 or 5 large sausages 1 tablespoon of apple sauce, and 1 table spoon of creamed horseradish sauce, this bit is optional mash it all together well put into a small baking dish and bake on 180 for 30 mins, is fab with any meat or on its own, hot or cold. I hope you try it.

Although I'm British by birth, my food has taken on more of an Eastern influence as I live in Australia.

In the last week we've had homemade Singapore noodles, Indian veg curries (aloo gobi and eggplant bhaji), Greek chicken with risoni, Vietnamese shaking beef, nasi goreng and on Sunday some roast beef with braised red cabbage and potato dauphinois.

The Tesco skin on fries have to be the best oven chips available. Very good they are. Lidl come a clos second, they are crispier but the Tesco ones have more flavour
