Alison Respects Her Salmon and Cooks It Low and Slow | Home Movies with Alison Roman

Today in Home Movies we are showing salmon some respect and cooking it gently… low and slow and covered in olive oil. We are making what can only be described as "A Really Nice Fish." A Really Nice Fish is any fatty fish (salmon, arctic char, steelhead trout) seasoned with salt and pepper and some sliced lemon, and cooked for a short 12 to 15 minutes in a sea (from one sea to another for this fish!) of olive oil. The olive oil protects the fish from being overcooked and the result is… perfection (yes, you can and should reuse the olive oil - it won't smell or taste fishy, promise). Of course, A Really Nice Fish needs… a really nice salad. A zesty, crunchy, maybe spicy vegetable or green compliments the simplicity of the fish so today we’re making Crushed Cucumbers with Sizzled Garlic. A combination of toasted garlic, paprika, a little bit of chili flake, fresh lemon juice, and vinegar pack a punch. She is elegant, she is refined, she is mature, she is classy. She is a Really Nice Fish with a Really Nice Salad!
