I've been making Joe Jost's recipe for a decade now. They are beautiful. here are the measurements:
8 hard-boiled eggs, peeled
1 (12 ounce) jar yellow chile peppers
2 tablespoons pickling spice
1 cup white wine vinegar
1 1/2 scant cups water
1 tablespoon sugar
1 teaspoon turmeric
2 teaspoons salt

When I made them, 2 days wasn’t nearly enough to soak in the flavor of the brine, did these take much flavor from the brine?

Don't ever dilute vinegar with water like that. You're messing with the PH, making them more likely to spoil. Hope you stored those in the refrigerator. If you ever attempt to leave pickled eggs unrefrigerated (don't recommend) you MUST use undiluted vinegar.

I skip the sugar and turmeric. I can’t tell any difference and my eggs aren’t yeller. Then when I make deviled eggs with them for potlucks people don’t get freaky. They just say, WOW, how did you make these? 😜

Dafuq is that?!... a week old egg? GTFOH😅 you guys need to let that set for like 3 weeks!... the whole white of the egg should be (preference) yellow😅 (I like mine hot!).
