Very misleading, this isn't aligning editable text, it's aligning an outline of text, which is as good as aligning any normal vector shape..

I knew there must have been an easier and more accurate way to align text in Illustrator (rather than trying to manually drag text up to a guide)

Thank you! Sometims it works. but not always. Problem nr 1: sometimes with shift my guide move instead of the text box. why its opposite? problem nr 2: even outlined text is not moving exactly to the guide, why?

What is the tip to keep Youtube overlay from blocking all of your top screen mouse clicks? Very difficult to follow this at the speed you were going when the video content is interrupted or blocked by 'Suggested... ' etc.

How do you get the text back to normal after creating the outlines? and aligning? This helped to properly align my text, but now I'm stuck with outlines and cannot undo because I will lose my alignment.

Useless. If you convert the text to outlines, it's not text anymore, you can't edit it later. So it's the same as aligning any object.
To align text to the real size of it and not lose editability you need to go to Edit>Preferences>General>Use Preview Bounds and make sure it's checked. Then Select the text object with the normal selection tool and go to Effect>Path>Outline Stroke.

Good grief. The guy just speeds past the most crucial part here, to the point where i had to freeze-frame it ( see 1:18 ): [ select text ] >Type > Create Outline ... this snaps that annoying text box outline to the exact edge of the text, allowing you to align it correctly within a box, without it skewing over to one side.
