i rather just use my computer to chat with open ai. why not use the esp 32 for something useful, maybe make a universal remote that actually works

And micro controller do what? Are usually connected all kind of things. Now who ever controls the AI has control over your devices, hell it does not even need to be ai but just malicious actor. This is why i would not have anything that can be abused like say coffee machine or washing machine with wifi. Breach into code and turn on the heating element 100% with out time cut out just on, or open the water filling solenoid in washing machine, filling the room with water if lid of open and eventually those start to leak since those are not designed to hold 4bars of water pressure inside the drum even if lid is closed. So water damage and fire are possibilities.
Bubut those are protected!! Ah yes, by locks.. designed by man... locks that are only for honest people.
