About Master Sushi Chef Hiroyuki Terada:

Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on YouTube.

At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

my favorite part about eating octopus either sushi or sashimi style is the natural crunch it has. really refreshing texture in seafood

Good Afternoon Chef Terada, I just made Kochi rice i bought like you recommended from Amazon.
I used your recipe for your Kochi hometown sushi rice recipe, and i just received my soy glaze from Amazon, now i don't have any Octopus, but I have imitation crab and Colossal sized shrimp I will use instead of the Octopus. Thank you so much Chef Terada!!

Agreed. Octopus sushi is very chewy in restaurants which is why it’s not my favorite sushi. I really wish I could try the fresh tako nigiri that Hiro made here, being so fresh and soft. I bet the difference in texture makes all the difference. 🍣

Hiro, please make a video of authentic Japanese potato salad!! It will be a very nice complement to your sushi etc. Dishes!! I'm sure it will be a big hit since it's so delicious! My mom has been gone 5 years to this date and it would really make my day. Haven't had it since she passed and would love to try your version.

No doubt, Octopus is absolutely amazing. I always have one in my freezer as I buy 2-3 every time they are on sale in the farmers market. I currently have a couple spanish purple in there.
